What’s in a Name?

Producing summer sausage is part of a tradition that came with the Mennonite settlers 200 years ago. It is part of their self-sufficiency, their way of providing for their families. Without refrigeration, keeping meat during the summer months was a challenge. Before refrigeration the family would slaughter their beef and pork in the winter when it was cold, and then made it into summer sausage to keep it through the hot summer months as the process made a shelf stable meat that did not have to be refrigerated, thus came the name summer sausage as it was a meat product for the summer months.

How to Keep Our Product

Our product is shelf stable and does not need to be refrigerated. We recommend you store the product in a cool dry area, and refrigerate after opening to keep its quality and fresh flavour. This product also freezes well. Our sausage is handmade using locally-sourced ingredients, fermented and dry-cured, gluten free and dairy free.

Where We Source Our Meat

Grass Fed Beef from Wilderness Ranch in Ontario

Here at Wilderness Ranch we have been farmers, people of the land for many years. We go a long way back – 6 generations to be exact!

My great-great-great grandfather came over from Europe in 1826 to homestead a piece of farm land near Kitchener Ontario. This property is still in the Erb family and is currently operating as a dairy farm.

In 1980, my parents moved to Monkton Ontario, and purchased a small farm. We had animals such as dogs, cats, chickens, and a few pigs. Of course the farm always had cows and calves. As the farming industry grew much larger, the small family farm with its mixed spread of livestock was fast becoming a dying breed.

Currently we have Black Angus cattle and a few dogs which has always been the heart and soul of what we do at Wilderness Ranch. We are very pleased with the genetics in our herd of cows and have spent many years trying to create the best quality genetics that benefit you as the consumer.

When you purchase meat from us here at Wilderness Ranch, the quality of meat you will experience is beyond anything you can purchase in the supermarket.
